Sighing... now look, I can tell you a PDF file created out of Illustrator contains exactly the postscript data as an Illustrator EPS. The word 'vector' is only an industry term used when referring to infinite quality and not file formats in any regard.
The term PDF stands for 'portable document format' and was created for compressing files and for use in cross platform applications, meaning it can be used in both Mac and PC enviroments whereas the EPS file format isn't native to PC.
The only way the color can shift or differ when creating a pdf from the eps is when color profiles are excluded or the entire Adobe package be it v8,9,10, CS or C2II color settings are not cross calibrated.
Either way just because a file may or may not contain correct color information it doesn't mean the color cannot be corrected at the printers end...it bloody can and this guy is yanking your crank!
The final word..find another printer if you can because this PPQ guy will run himself out of business because he has NFI!!
