  3. Some meat is not good rare... Deal with it. It's fact. Wanna try a kebab cooked rare? Didn't think so. Or perhaps a good ol stew or maybe even some good ol fried chicken Hate to break it to you, but when it comes to cooking steak you don't know shit junior. And I am actually qualified to say that
  4. because a rare ribeye / scotch fillet for example is pure shit. it has fat that hasn't broken down and tastes like ass a rare eye fillet is great on the other hand
  5. not to mention... a chef worth his salt will buy entire cuts and break them down himself which means he has a wide variety of choices to give you take a ribeye for example. so you clean up the whole thing and portion it. as the you go along the rib the steaks get progressively tougher and leaner. so what happens is the shitty fat free tough as old boots ones get put in their own special pile for well done steaks and rude customer (or those that come in at close) then the chef has his little collections of the remainder with varying marbling, sinews etc. you order the correct doneness and he will get one of the better ones. you tell the waiter to "just let the chef cook it" they will go straight to the "piece de resistance"
  6. fark all + IF kitchen gets tips, it's usually 10% divided between the whole kitchen staff yes, it is shit this is of little consequence. how can you say how you want a piece of meat cooked without seeing the piece of meat in question

  8. because every piece of meat is different and as you cant see the meat in question, you can't ascertain how it needs to be cooked. also because the chef at Rockpool has cooked probably 20,000+ steaks in his life and knows infinitely more than you about cooking steak. which all of course means... you will get a better steak
  9. It is good... but I have had better make sure you get the Harissa with the steak... shit is biblical Just had a quick squiz at the current menu... i'd reccomend: rangers valley dry aged 300 day grain fed Rib-Eye on the Bone 440g 69 days $75 and tell the chef to cook it how he wants
