Plastidip is pretty strong stuff if applied enough of it, so I wouldn't really worry about stone chips on the wheels. As for removing vs vinyl. I reckon the plastidip would be easier to remove vs vinyl. I think even with stone chips on paint, plastidip wouldn't rip off more paint, where as the vinyl will and will also leave a fair bit of sticky residue from the adhesive backing.
Also, on certain objects i.e. rims with many spokes, wrapping it with one piece just becomes much more difficult and sometimes impossible, where as plastidip would get into all areas.
IMO, the only downside to plastidip is the rough finish.
