Got it done by a mob near mine, in Vic. They charge $150 ea, but they do an absolute awesome job! It seems like they refurbished it so well, that it's like brand new, and they don't go yellow anymore, AT ALL!

Have a look in the DIY section, some guy has a tutorial on installing HID's to his R34 headlights, on one of the pic, it shows the little adjustment screw.

As for being "exposed to the gear stick", try using some electrical tape around the bottom of your gear knob, wrap some around the gear stick a few times, then pull the gear boot up to the tape. The tape should be thick enough to hold your gear boot on.
Hmmm... The headlights lens from R33 and R34 are not glass.... That's why they get murky, because of the UV on plastic...
As for fixing leak and stuff, there are headlight places out there that would do that. It is somewhere between $150-300 per pair.
They would pull it apart, even polish/cure/recondition it for you, then seal it back together so it looks brand new.
I had mine done and now they don't even turn yellow anymore.
