point taken, would probably try it then, BUT, how big is the esky you're using and what brand? and some have terrible terrible heat sealing.

@ hamish, does the sous vide in the esky hold 59 degrees for the entire hour? or is there a temperature drop? I'd normally prefer to sear after i sv though. so i'd be concerned about temp drop when i put in the meat.
