it wont add more turbo lag just a slight different to throttle lag, that is when you open the throttle you have to presurrize the pipework, hardly noticable i wouldnt think

The majority of intercooler kits available at the moment for RB20's use 2.5 inch piping, no need for 3 inch unless you are running an engine with serious HP

Keep the piping the same size as the diameter as the outlet of the turbo. Only go bigger if you have to say to connect to the intercooler or throttle body.

There is no point going any larger, a system is only as good as the smallest point.
