Just wondering if someone could explain the difference the turbo housings make on different turbo's.

Ie like .64 & .86 Exhaust Housings, and like 48, 56 Trim on the compressor wheel, and .50 on the compressor housing

What difference can these make on the HP of the turbo and also the lag in which they may or may not have, in regards to response.

Have a look at the tutorial section on choosing a turbo, it sort of explains a bit, but the best one I've found is:

http://www.turbobygarrett.com/ and then go to the tutorials 101, 102, 103. They will explain it pretty well.
