Having cooling issues with the bonnet, got plans to get some vents cut cause i am sick of my power steering fluid boiling over. Before I test out my high school metalwork skills, anyone got a recommendation for a custom panel/paint shop on the GC? To be worth it, needs to be cheaper than a new carbon bonnet (<$1K).

Alternatively, anyone done anything like this before? And if so, how afraid should I be?

Only if you cut through the supports. If you want venting go with a carbon fibre item http://www.blitsbodykits.com.au/index.php?pr=NISSAN_BONNETS and they are 100% Police friendly . Im saving and will eventually have one.

Will cost about the same to have yours cut and shut.
