what temperature should your car run at?

I've got 2 temperature gauges, one is on the outlet of the radiator, the other I believe is on the inlet.

The temperature gets up to 105 deg C, it's half-way on the factory gauge. I'm not loosing any coolant, I have new thermostat. In a cold but sunny day, driving on a highway, it gets to about 80 deg C on one gauge, and 105 deg C on the other. Is that normal? should it run cooler?

I found cheaper fuel makes your engine noisier, so i never put normal unleaded.

i use caltex 98 / it normal is about 69-70 C on a normal day but these hot weeks its been running hotter i might need to get some new plugs then yeah its normally around the 26-45 knock range and at times if the fuel is shit it peaks at 65 but this is the first time iv seen it get this high

Where I can I run of BP ultimate and it always stays within a good range, when it's hot gets up towards 40.

Had to put Shell 98 in it a few times and its been running well enough on that past week or two.

I don't like Caltex fuel, maybe its changed but had some bad experiences with my last Skyline running like a bitch on the stuff so I have never returned!
