Bossy Boots Cafe in Bay St, Brighton do some amazing cakes. They have a separate cake menu, but can make you pretty much anything you want. I highly recommend the chocolate ganache/caramel cake

I have to agree with the others who recommended MARK'S cakes. I have had a number of different cakes from there and always perfect. Almost every good cafe gets their cake's from there. My favorite is the Marks cake (mars bar)
