could probably go 255 but the question is why?

for everyday driving it'll have too much roll in the sidewall.. you'd only really slap a fat tyre on there for straight line grip off the line..

I just want to know if there will be any benefit in putting wider tyres on the rims.

235/40 maybe for appearance or wider again on the rear if your after grip off the line, but for general use even circuit stick to the recommended size on the tyre placard. invest in a better tyre instead.
