At the front of the plenum are two temperature sensors. One is the "Engine Coolant Temperature Sensor" the other is listed as "Thermal Transmitter" I understand what they do.

Adjacent is a large hex plug, 24mm, screwed into the head. What is the purpose of this??

Have scrolled the R33 disc but could not locate it.

on the thermostat housing? (or near it)

one is for the ecu, one is for the temp gauge in the dash

edit, the single wire will be for the dash, double for the ecu

i think your talking about the VCT (variable cam timing) solenoid Hugh. its got a two pin electrical plug on the top.
