Central Locking Question 03 Coupe

I have had my V35 for a few months now and believe it or not i still haven't fully got my head around the central locking/alarm.

At the moment i have my mirrors set so when i lock the car (with the lock button) they fold in, then when i start the engine they fold out. But occasionally when i go to unlock the car using the actual unlock button it doesn't work and i need to press it again for it to unlock the drivers side door.

Also the alarm, i had a a few embarrassing situations driving it home from Brisbane (1,000+ KM) when stopping at servo's it always seemed to go off so, and sometimes even now it happens, if anyone has the full gist of how it works please let me know.
