Is there a list of 'normal' sensor readouts around anywhere? so we can tell if sensors etc are within normal operating range?

For the GTR the workshop manual gives normal operating ranges to be expected from all the sensors.

is the consult plug the same on all? I have a s13 with an RB20 but kept that part of the loom (from the s13)

yeah the connectors are the same. If you wired up the stock connector to the stock rb20 ecu then it would still work.

Are they compatible with ca18det? My 180's had a manual conversion (in Japan before import) so not sure if ECU was/or needed to be swapped. If you have them for the CA, are manual and auto ECU readouts the same??

If its compatible with a ca18det, will I be able to use just one unit on both the CA and an rb20det? Thanks in advance

THe ca18 ecu doesnt have a consult connector on the loom. I have heard that Consult is supported on the ecu, and that you can wire in your own connector. I havent seen this done with my own eyes though.
