You only want to go 7s for high boost applications (aftermarket turbo). For standard turbo applications, or if the car sees a lot of traffic driving, then 6s are the better option.

As for gap, if you can run the 1.1mm gap and not get a misfire then do it. If it starts to misfire then reduce the gap until it doesn't. If you have good coils then you shouldn't need to reduce the gap. As been said earlier, when it comes to plug gap, bigger is better.
