Coilover Setup Front Only

is it even possible to just use coilovers at the front only and stock ones in the rear? or is it just stupid and could this make the vehicles alignment shit?

Alignment won't be a problem, but spring rates will be massively mismatched and you will have a handling disaster area.

It is even possible to only put coil overs on the passenger side (or drivers if your a mad man)

It's is entirely possible. My car is like this. I have height adjustable coilovers on the front and not on the rear. Except I have coilovers in the rear too, since they come stock like that.

Essentially the term "coilover" doesn't tell us enough about what you intend to do. What is the spring rate ? What do you mean by "stock" on the rear. etc etc.
