Yes, I want to have a stock looking engine bay so want to use Stock Fuel Regulator and Stock Fuel Rail

Yes, safety precautions is what I have in mind. And I am running Haltech Platinum PnP so it will be helpful when doing dynos and logs.

All I am concerned is if I use this adaptor location would it still be a good reading for safety precautions and monitor health of fuel pump ...etc

FAIL the fuel pressure sensor adapter for 350z fuel rail, doesnt fit on the the stock RB26 fuel rail. The adapter is a bit wider than the fuel rail.

So now back to the drawing board. Any suggestion in how to secure the sensor T adapter off the fuel line between fuel filter and the fuel regulator?

Yeah, look for a barbed T piece block with a 1/8" (or whatever the sensor's thread actually is) female on the block and the hose barbs on the straight through. There would have to be a thousand different things that could be put together out of more than one fitting, or at least several options that are all-in-one, from pneumatics and hydraulics suppliers, speed shops, etc etc.

Then install it into the fuel line just after the fuel filter and before the rail.

Still think this is the best way to do it.

Remember you're not actually making any calculations based off of the reading, just looking at the reading to stop the show if there are any drastic changes in it, so really anywhere between filter and reg is going to do that job.

Friend just put a bronze tee on his line from filter to rail, then ran a line the 10cn or so to the sensor mounted on the strut tower.
Pressure will transmit fine. At the end of the day it's only going to be an indicator anyway. Pressure doesn't always colloratre with flow.
