Hello I am going to remove the old center gauges from my R32 GTR.

Few reasons just in case you want to know.

1) boost doesnt read high enough (and on EVC controller)

2) Volts is on turbo timer

3) Oil temp to be moved to new gauge.

This allows me to install a 2DIN navigation/reverse cam head unit and keep aircon etc.

my question is - can I just unplug the gauges and leave the wires behind untouched or do I have to do anything else?

Yep, you can just unplug them. volts comes straight from the power supply to the gauges, oil temp is 1 connector on the oil/water heat exchanger under the plenum that you could now unplug or remove, and boost comes from a map sensor on the firewall next to the brake booster, which you could also unplug and remove (remember to block the air hose that goes to it if you do)
