It's not exactly putting extra fuel in .. what happen is the air flow meter measures how much air is getting sucked into the engine and the computer puts the right amount of fuel in.

When you don't plum it back you're sending air the air fuel meter has already measured (and the computer has calculated on being in the engine) into the air... So this means that the car is left with all too much petrol everytime you hear the PSSShHHhHT.
